Heat the honey, sugar, butter and milk in a bowl in the microwave. The butter must be melted. Add salt, lemon juice and cinnamon.
Gradually stir in half the sifted flour and yeast. The dough should be slightly liquid. Pour the remaining flour and almond powder onto the work surface, mix and make a fountain. Pour in the dough and knead quickly.
Roll out the dough, then use a cookie cutter to cut out shapes to place on a baking tray lined with parchment paper.
Bake for 15 minutes at 180°.
